  1. Roast the eggplant on a open fire either on your stove top or a grill. Fully char the outside until the interior is soft.
  2. When the eggplants are cooked, allow to cool enough to handle. Using a spoon skin the eggplants and chill the pulp.
  3. Roast or sautee the garlic clove until brown
  4. In a blender mix together eggplant, tahini, garlic, and olive oil until smooth. Add in lemon juice, zest, and sumac. Salt and pepper to taste
