  1. Heat the oven to 325 degrees F and arrange a rack in the middle. Spray a 13-9 inch baking dish with oil spray; set aside.
  2. Mix together salt, cumin, cardamom, cinnamon, and pepper in a large bowl until evenly combined.
  3. Add spinach, leek, parsley, and cilantro and mix until evenly coated.
  4. In a second large bowl, whisk eggs. Pour egg mixture over greens and mix until evenly combined.
  5. Pour mixture into the prepared baking dish and bake until firm in the center, about 25 to 30 minutes. Let rest for 5 minutes.
  6. Can either serve hot or cold, with a salad, yoghurt or on its own.
