  1. In a medium sauce pot on medium low heat, sweat the onions with a little bit of olive oil until translucent.
  2. Add cream and bring to a boil, boil for 5 minutes and reduce to low simmer until it reduces by a quarter.
  3. Strain out the onions and return to the pot. Add the sticks of butter and let it melt over low heat.
  4. While the cream is reducing, in a larger pot cover the potatoes about an inch above with cold water. Salt the water generously, and bring to a boil. Cook until a tender.
  5. Either using a ricer, which is what i always recommend, or a fork mash the potatoes. Add in half of the sour cream and whisk. While whisking, slowly pour the cream/butter mixture little by little. Keep adding until the potatoes become nice and smooth. Season with salt and pepper to taste. Adjust the amount of seasoning, sour cream, and cream/butter mixture until the desired texture and flavor is achieved. Top with chives and enjoy while hot
